Yes, we moved into a new country and we will be wrapping up on East Africa very soon for this season.
So just incase you didn’t know, the capital of Uganda is KAMPALA. Let’s head to the food section please and explore other East Africa Cuisines (lol)
MAIN DISH
- Katogo: A traditional and heavy breakfast dish that can be eaten during the day, katogo consists of fried plantains or bananas with soup and beef, beans, or animal (cow, goat, chicken) offal spiced with vegetables. This meal is popular with Ugandans.
Ingredients
- Green bananas/plantain
- Tomatoes
- Pepper
- Onion
- 1 teaspoon of oil
- Salt
Method of preparation
- Peel the green bananas. Place the peeled bananas in water to avoid it from getting brown quickly.
- Dice the tomatoes and onions and set aside. Place a clean pan on fire and add the 1 teaspoon of oil. Add the onions and let them cook till translucent. Next add the tomatoes. Let the tomatoes cook till tender and paste-like.
- Add the bananas and enough water to almost submerge the bananas. Let the katogo boil till the bananas are almost tender. Add salt and pepper to taste.
- Once they start becoming tender, reduce the fire and let the katogo simmer. Remove from fire and let cool. Serve with ghee, a side of greens and tea.
SNACK
- Sim Sim Cookies: are made by heating a mixture of sesame seeds and sugar (or honey) until a paste is formed. Afterward, the mixture is poured out onto a flat surface to cool and then sliced into desired shapes.
Ingredients
- Sesame seeds
- All purpose flour
- Margarine or butter
- Sugar or Honey
- Milk
Method of preparation
- Mix flour and margarine till it’s crumb like, add the sesame seeds to this mixture.
- Mix the milk with honey and stir.
- Add the honey-milk mixture to the flour, margarine and sesame mix.
- Shape and bake for about 10 minutes or until they turn brown (gauge it)
