ETHIOPIAN DABO KOLO

Season 1 Episode 22

Hello, welcome to another episode of Learn Africa, today we’d be looking at the Ethiopian Dabo Kolo and Tej which is a snack and drink respectively.

Dabo Kolo (Little Fried Snack)

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 tablespoons of honey
  • ½ teaspoon cayenne pepper (chili pepper)
  • ¼ vegetable oil

Procedure

  • Add the all-purpose flour into a bowl and add water slowly while stirring
  • Add salt, honey, cayenne pepper and vegetable oil into the bowl and continue stirring till it forms a stiff dough
  • Mix the dough thoroughly on a clean board for some minutes. Turn the dough by folding into different shapes and sizes
  • Use a rolling pin to roll out the dough, cut into pieces and take out squares of the dough
  • Fry the pieces inside a frying pan

Tej (Ethiopian Honey Wine)

Ingredients

  • Honey
  • Water
  • Gesho (Rhamnus prinoides) or Hops
  • Yeast
  • Boiling pot
  • Bucket

Procedure

  • Put water into a boiling pot, dilute the honey inside the water and boil for a little while
  • Boil the hops separately inside a pot of water for a couple of minutes
  • After boiling the hops and honey separately, mix the contents inside a bucket and add a little amount of yeast and cover with a white linen to allow fermentation process to occur for some days
  • Stir the mixture at least twice daily during the process of fermentation
  • After the process of fermentation has occurred, sieve the mixture with a clean cotton cloth, add small boiled water and let it cool down
  • You can decide to add some quantity of white wine
