Season 3 Episode 14
On today’s episode of Learn Africa we’d be learning how to make the sourdough pancake and karkanji drink (zobo drink). This is mostly for those who have no idea on how to make pancakes or zobo drink.
SOURDOUGH PANCAKE

Ingredients
- Fresh sourdough starter
- Eggs
- Sugar
- Vegetable oil
- Baking soda
- Milk
- Water
Method of Preparation
- Put the sourdough inside a clean bowl, break the eggs into the sourdough and mix.
- Add sugar, 2-3 tablespoons of vegetable with baking soda and mix thoroughly.
- Add milk to the mixture and beat thoroughly with a whisker.
- Continue to beat till everything mixes well.
- Heat some quantity of vegetable oil inside a frying pan and start to add the mixed dough and fry till it turns golden brown and flip to the other side.
KARKANJI DRINK
This is the same thing as Nigerian zobo drink and it’s made from hibiscus flowers.

Ingredients
- Hibiscus flowers
- Grated ginger
- Flavoring
- Sugar
- Water
Method of Preparation
- Boil water in a cooking pot and add the hibiscus flowers and continue to boil till the flowers lose their color in the water.
- Add the grated ginger into the mixture.
- Put the heat off and allow the mixture to cool for some minutes.
- Filter the mixture to remove the flowers and ginger with a filter cloth and put the juice in a clean bucket or bowl.
- Add flavoring and sugar to the juice and stir thoroughly.
- Serve chilled.
