It’s Food O’clock and we’d be checking out these snacks made and enjoyed by the people of São Tomé and Principe.
FRIED COCONUT BANANAS
Ingredients
- Grated coconut
- Bananas or plantains
- Coconut milk
- Sugar

Method of Preparation
- Peel the bananas or plantains and slice diagonally.
- Heat the sugar in a frying pan until it melts.
- Add the coconut milk to the frying pan and mix well.
- Add the bananas into the frying pan and flip sides when it turns slightly brown.
- Sprinkle the grated coconut onto the bananas until it is well cooked.
- Remove from heat and serve.
PEANUT BRITTLE
Ingredients
- Roasted peanuts
- Corn syrup
- Butter
- Sugar
- Salt
- Baking soda
- Water

Method of Preparation
- Put some quantity of water into a saucepan and place over heat.
- Add sugar, corn syrup and salt and stir well.
- Add the peanuts and continue to stir over high heat and allow to boil.
- Remove from heat and immediately add the butter and baking soda and stir.
- Pour the mixture into a clean aluminum pan or flat sheet covered with foil.
- Allow to cool and solidify after some minutes, then cut or break into desired pieces.
