In the Southern part of Africa, there lies a country rich in natural resources at the Indian Ocean coastline, sharing border with Zambia, Zimbabwe, South Africa, Tanzania and Malawi.
We’d be looking at Mozambique and its cultural heritage, from food to tribes to clothing to languages and tourist attractions.
Let’s check out some cuisines loved and eaten by the people of Mozambique.
MAIZE PORRIDGE
INGREDIENTS
- Cornmeal
- Water
METHOD OF PREPARATION
- Put water into a pot and boil
- Mix a small amount of cornmeal with cold water
- Reduce the heat of the boiling water and add the mixed cornmeal and stir continuously
- Add the cornmeal gently and keep stirring as it cooks
- When the mixture becomes thick, add a little and allow to cook for 3-5 minutes
- Put off the heat and serve it
MATATA (SEAFOOD AND PEANUT STEW)
INGREDIENTS
- Finely chopped onions
- Cloves of garlic
- Vegetable oil
- Red pepper
- Black pepper
- Finely chopped tomatoes
- Salt
- Cup of roasted peanut
- Chopped spinach leaves
- Shrimps
- Canned clams
METHOD OF PREPARATION
- Fry the chopped onions in a saucepan until the onions are soft
- Add the chopped tomatoes, black pepper, red pepper and stir over low heat
- Add the roasted peanuts, canned clams, salt to taste and cook for 30 minutes
- Add the the spinach leaves to the mixture and allow to simmer for 5 minutes
- Matata is ready to be served
SOUP – PIRI PIRI SAUCE
INGREDIENTS
- Crushed cloves of garlic
- Chopped parsley (scent leaf)
- Ground cayenne pepper
- Chili pepper
- Lemon juice
- Cooking oil
- Salt
METHOD OF PREPARATION
- Mix all the ingredients together in a saucepan and apply heat for 5-10 minutes
- Piri piri is ready to be served

Mozambique cuisine is awesome. Other than the wonderful sea foods, my favourite is the soup made with cassava leaves and coconut milk.
